Happy meal, no McDonald’s

It doesn’t take much to make me happy. Actually, all it takes you can see in this picture (Sunshine included)!
The last days were a breeze: Good weather, well at least sunshine while it is getting colder every day, long and wide roads, beautiful landscapes and quite many encounters with natives of the coastal region. But still it is getting a little monotonous while on the bike. I guess that’s why my thoughts become a bit louder and my breaks get longer.
So, what to do against a rut? Have a meal like a king!
I‘m proud to let you know that this meal was sponsored by my new Swedish Grandma I just met today, Inger.

When I was having a break in front of a church south of Sundsvall, she approached me and, although her English is as limited as my Swedish, we got along brilliantly. She invited me in for a coffee and called her friend Monika immediately to function as a translator. Thus nothing was in the way for a talk about her grand grand children, what I do when I’m hungry or cold (the usual grandma questions I assume) and her late husband. It was a pleasure spending a few hours with such a sincere and big hearted person!
And shout out Thang at this point, without whom I’d never had been able to identify the mushroom I found just when I started preparing the meal. Before I lose many words without saying anything, here is how to prepare some lovely pasta:
Another big thanks to Yassin, who is the reason I’m not freezing in the night. While it gets nearly 0 degrees already, every night since Monday i can snuggle up in my new and tremendously cozy sleeping bag and have dreams about moose under the northern lights. Not to forget a friendly elderly couple who invited me to have my dinner at their place, because there was still a little sunlight in their garden, while my place to eat was covered in cold shadows. As a cherry on top I even was given some lingons (Cranberries), which I had mixed into my porridges the next couple of mornings. For example that one morning another friendly woman let me prepare my breakfast at her terrace, looking at the ocean and enjoying the quiet comfort of the Swedish coastal forests.
